EFFECT OF DROUGHT STRESSES ON GROWTH AND ANTHOCYANIN CONTENT OF BLACK RICE AND BROWN RICE

Rice is not only serves as souce of energy and nutrients, but also contains active components with the physiological function of being beneficial to health. Black rice and brown rice have been known to contain an anthocyanin antioxidants. This research aimed to axamine the effect of water stress intensity to the growth, yield and quality as anthocyanin compound of black rice and brown rice. The research was conducted from January to June 2013 in the Screenhouse of Faculty of Agriculture, the University of Sebelas Maret (UNS) in Surakarta at 96 meters above sea level. Anthocyanin was analyzed in Laboratory of Biotechnology belong to the Faculty of Food Technology, the University of Gadjah Mada in Yogyakarta. Design used in research was Completely Randomized Design with two factors and four repetitions. The first factor was rice cultivated (local cultivates Bantul and Wonogir)i. The second factor was water stress intensity consist of four level ( 0%, 25%, 50% and 75%). The were data analyzed with F test at 0.05 and continued with Duncan’s. Variable of anthocyanin content was analyzed descriptively. Research result’s shown that water stress intensity decreased the growth and anthocyanin content of black rice and brown rice, except cultivar Boyolali on 25% water stress intensity increase anthicyanin content.
